Ingredients
  

For Kibbeh Dough Ingredients

  • 2 glasses fine bulgur
  • 2 glasses hot water
  • 1/2 glass semolina
  • 1/2 glass flour
  • 1 tablespoon pepper paste
  • 1 tablespoon tomato paste
  • 1 egg medium
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon chili pepper

For Kibbeh Filling Ingredients

  • 500 gram ground beef
  • 4 onion
  • 2 tablespoon butter
  • 1 glass walnuts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon pimento
  • 1 dessert spoon pepper paste
  • 1 dessert spoon chili pepper
  • 1 teaspoon cumin
  • 1/2 bucnh parsley

For Frying

  • 3 glasses oil

Instructions
 

For Filling

  • The filling ingredients of the kibbeh need to be made first because the filling must be cold.In a deep pan, put the ground beef, butter and salt.
  • Roast by crushing with a spoon until the ground beef is drain. Add the finely chopped onions and roast the onions.
  • Then add the tomato paste and spices, mix it with a spoon a few more times and take off it the stove.
  • Finally, add the chopped walnuts, mix and let it cool.

For Dough

  • Wet the bulgur in hot water in a deep bowl. Cover it and let it sit like this for about 10 minutes.
  • Add semolina, spices, salt, tomato paste, egg on it.
  • Add the flour little by little and start kneading.
  • Make a dough that does not stick to your hands by pouring water over it and knead for about 30 minutes. The dough should be neither too firm nor too soft.

Making Kibbeh

  • Take egg-sized pieces from the dough we have prepared and roll them in our palm.
  • Meanwhile, immerse our thumb and index finger in the middle of the dough by dipping our hand in water.
  • Then, let's thin and enlarge the dough by turning the dough in our palms with light movements and spread it with our finger.
  • Let's put about 2 dessert spoons of minced meat in the middle of the dough.
  • Then, let's squeeze the open mouth between our index and thumb slowly and make it close at the top. repare the remaining dough in the same way.
  • fry in a deep pan in plenty of oil and serve.
